Dr. Maureen Storey is the President and CEO of the Alliance for Potato Research and Education which is located in Washington DC… Not Idaho, curiously. So I just had to talk with her and learn about her mission. The Alliance for Potato Research and Education is a nonprofit research and education organization whose primary goal is to support science, education, and communication initiatives on the role of potatoes and potato foods including french fries and a healthy and well balanced diet. We are strictly science-based. Our primary audience is the scientific community, particularly in the nutrition area as well as health professionals. potatoes are a vegetable which are a great source of potassium and dietary fiber which 97% of the population is not adding enough of either one of those nutrients, so they are nutrients of concern. Potatoes are a better source of the chassis and than bananas.
