Adding Value By Examining Performance Metrics

Research shows consumers are willing to pay more for an exception eating experience, and Certified Angus Beef consultant Dr. Larry Corah says that focusing on the end-product can bring real dollars back to beef producers he suggests analyzing available performance metrics as well
Corah: “A key is that make sure that they have a good health program, of course. On the growth side, that you are paying attention to weaning EPDs, and yearling EPDs or even dollar index values can tell a lot about how cattle will do once they leave that ranch or farm. When they are using bulls make sure that they pay a little attention to the marbling figure -- that marbling EPD value to make sure that these cattle when hang on the rail that they ultimately do what we hope they all do. It is really managing the little things that can ultimately lead to some added dollars.”
Dr. Corah says that with the increase in beef prices over the past several years, consumers are demanding a high quality eating experience.
Corah: “So we are seeing a real upward swing in the demand for that higher quality product — whether it is again prime or premium choice type product -- that is driving the market place. It is starting create an added $50 on these calves at weaning time or ultimately when they come off the feedlot maybe as much as $80 to $100 to $120. So it is really this high quality product that the consuming public is demanding that has been increasing in the last five to eight years. I think it will continue to increase and that is the opportunity for the cattle industry to add value.”
