I got an e-mail from the Alliance for Potato Research and Education. “Happy 2014 National Nutrition Month®! This year's theme, "Enjoy the Taste of Eating Right," is a terrific reminder to us all about the importance of selecting nutrient-rich foods like potatoes from the five MyPlate food groups each day. Eating right means getting the right amount of essential nutrients and the right amount of calories from the foods we eat. We know that the potato in all forms--baked, boiled, roasted, mashed or fried--is an affordable and appealing vegetable packed with potassium, dietary fiber, vitamins C and B6, and other needed nutrients in a healthy diet. These words recently spoken in congress by Idaho Congressman Simpson “I am deeply disappointed in the USDA’s decision to ignore legislation that directed the agency to include fresh potatoes in the WIC Program.”
