Introducing Spud Nation Chef Brandon Cassulis

As the weather gets warmer and more and more events are happening in the Denver area — the Spud Nation Food Truck is on the move and has a new face. Chef Brandon Cassulis, a New York native, is three weeks in to his new position and shares how it is going so far
Cassulis: “It is amazing I mean it is a lot of work but it is worth it when you get to go to all these places and go around and explain what the truck is. We just did the South Denver Beer festival. We do on Wednesday’s we do the Civic Center Park — they have all the food trucks go there so that is fun. ”
He said he is learning the streets but that he isn’t enjoying the Denver traffic. He continues with his favorite Spud Nation menu item.
Cassulis: “So far one of my favorite things to cook is the Taco de Pappas because the color on it looks really good — when you add with the cabbage, tomatoes and the cheese on top and it’s fried nice. It is also a vegetarian option. So a lot of people who come up to the truck look to see what options they have — whether it’s gluten-free or vegetarian. So it is nice to have options fro people who have dietary restrictions so everyone can enjoy themselves.”
